• 450 g (1 lb) courgettes
  • 1 red pepper
  • 450 g( 1 lb) skinless chicken breast fillets
  • 30 ml (2 tbsp) oil
  • 1 garlic clove, crushed
  • 45 ml (3 tbsp) dry sherry
  • 15 ml (1 tbsp) light soy sauce
  • pepper

Cut the courgettes into long thin strips. Cut the pepper into strips, discarding the core and seeds.

Slice the chicken into thin strips. Heat the oil in a wok or a large frying pan and fry the garlic for 1 minute. Add the chicken and cook for 3-4 minutes, stirring continuously.

  

Add the courgettes and pepper and continue to cook for 1-2 minutes, until the chicken is cooked and the vegetables are tender but still crisp. Stir in the sherry and soy sauce and cook for 1 minute. Season to taste with pepper. Serve immediately, with boiled rice or noodles.
