• 900 g (2 lb) courgettes
  • 1 spring onion
  • 30 ml (2 tbsp) olive oil
  • 4 garlic cloves, crushed
  • 15 ml (1 tbsp) sesame oil
  • salt and pepper
  • 30 ml (2 tbsp) toasted sesame seeds
  • coriander or parsley sprigs, to garnish

Thinly slice the courgettes; thickly slice the spring onion.

Heat the oil in a wok. Add the garlic and fry for 2 minutes.

Add the courgettes and stir-fry for 7-8 minutes. Stir in the spring onion and sesame oil. Season with salt and pepper. Cook for a further 1 minute, then add the sesame seeds. Stir once and serve hot or cold, garnished with coriander or parsley.
