Kid friendly vegetable pasta salad is a nutritious and colourful dish prepared with vegetables, pasta and a simple dressing. It is a vegan and nut-free dish that children love, perfect for packing in a lunchbox or as a filling summer meal.

This wholesome and colourful veggie packed pasta salad is a win for both parents and kids. The vibrant vegetables and fun pasta shapes make it visually appealing for kids.

Take extra care when kids are handling sharp tools or near the hot surface, assist and supervise them all the time in the kitchen. Do not allow kids to use a sharp knife to cut fruits. Ingredients

  • Pasta: We have used radiatori pasta shape, but feel free to use any shape that your child prefers.
  • Vegetables: Cucumber, cherry tomatoes and corn.
  • For Dressing: Olive oil, lemon juice, oregano, salt and pepper.

Step By Step Instructions

Step 1: In a bowl, combine olive oil, salt, pepper, lemon juice and oregano.

Step 2: Set it aside to use later.

Step 3: Cook pasta until al dente and prep vegetables.

Step 4: Place boiled pasta in a wide bowl.

Step 5: Add cherry tomatoes, cucumber and corn.

Step 6: Drizzle prepared dressing over pasta and vegetables.

Step 7: Mix well with two spoons until the pasta is well coated with dressing.

Step 8: Cover the bowl and store it in the fridge until ready to serve.

Serve a delicious kid friendly vegetable pasta salad for a meal or pack it in the lunchbox.

Substitutions and Variations

Vegetables: Try more vegetables such as mixed bell peppers, carrots, peas or steamed broccoli.

Pasta: Try different pasta shapes to make the dish more interesting for kids.

Herbs: You can substitute oregano with basil, thyme or parsley.

Black Pepper: Omit pepper if you are making it for toddlers or kids who prefer their pasta without any spices.

Storage

Store leftover vegetable pasta salad in an airtight container in the fridge for up to 3 days.

Tips and Tricks

Cook Al Dente: Do not overcook pasta, cook it just until al dente. Overcooking makes pasta too soft and might break apart while combining with vegetables and dressing.

Cold Water: Run boiled pasta under cold water in a colander to prevent it from sticking to each other and prevent it from cooking further.

Cool Pasta: Make sure pasta is well drained and cooled properly before making a salad.

  • 1.5 Tablespoons Olive Oil
  • 2 Teaspoons Lemon Juice
  • Salt as required
  • Pepper as required
  • ½ Teaspoon Oregano
  • 1 Cup (or) 115 gms Radiatori Pasta
  • 5-6 Cherry Tomatoes wash and cut each into half
  • ⅓ Cup (or) 70 gms Cucumber wash and dice
  • ¼ Cup (or) 45 gms Frozen Corn thawed
