A Quick and Easy Cold Dip

Fresh and in season, summer is the perfect time to whip up a tasty sour cream chip dip. Flecked with bright green chives, this cool and creamy recipe pairs perfectly with crunchy chips and crisp veggies. It’s also versatile—delicious spooned over Garlic Roasted Potatoes or shared as a dip with Crispy Oven Fries.

This Recipe Is

  • shared cold
  • tangy, lightly oniony
  • rich and creamy

If you make homemade appetizers, you’ll enjoy this easy recipe for chive and sour cream dip. Let’s get to it!

About the Key Ingredients

  • Sour Cream– rich and tangy, look for full fat (not low fat) cultured sour cream, which tends to be thicker. This will offer the best consistency for clinging to veggies and chips. Look a brand with minimal ingredients, without thickeners or stabilizers. I like Nancy’s or Organic Valley brands.
  • Mayonnaise– adds a boost of tangy flavor, and richness. Use your favorite here, egg free if needed.
  • Chives – fresh from the market, or garden for best texture. Look for sturdy bright green chive stalks.

Tip: if the chives have their flowers, you can garnish the dip with them. Chive flowers are edible and delicious.

Traci’s Tips

  • Make Ahead:rest in the refrigerator for at least 30 minutes before sharing so the flavors can marry.
  • Salt to Taste:easily increase salt to taste. I’ve included just a touch in the recipe, but find I always add a pinch or two more.
  • Double It: for a larger portion, this recipe doubles easily.
