Air Fryer Steak Bites – juicy marinated chunks of steak, cooked to golden perfection in the air fryer. I love to serve these as part of a rice bowl with pepper and onions.
They’re super quick to make – only needing about 6-8 minutes in the air fryer.

Nicky’s Recipe Notes
One of the things I love about air fryers is that they can get super hot really quickly, so they’re great for meats that need hot, quick searing. Steak, of course, is the perfect example. Doing it in the air fryer also means you don’t have to worry about oil splatters!
Usually I don’t bother to preheat my air fryer, but it does help to get those crispy edges if you preheat it for just 5 minutes, while you chop up and season the steak. Then chuck the seasoned steak in and it’s ready in minutes!
My favourite ways to serve these steak bites are:
- With rice, peppers, pickled red onions and beans as part of a rice bowl (check out my rice bowl further down this post)
- As a sharing appetizer – a bowl of these on sticks with some sweet chilli sauce
- With crispy potatoes and green beans
- With salty french fries, a wedge of ciabatta and a good drizzle of garlic mayo
How to make it:

- Cube your steak into bite-sized pieces and preheat your air fryer. Meanwhile, drizzle oil over the steak chunks and mix in the seasonings until each piece of steak if evenly coated.
- Transfer the seasoned steak bites to a preheated air fryer basket.
- Air fry until browned with a golden crust, tossing once halfway through cooking.
- Give the steak bites a few minutes to rest on a warm plate and then serve.
Pro Tip
Don’t overcrowd the air fryer basket! Cook in a single layer to ensure proper cooking. This prevents the steak from steaming – which would mean no lovely golden sear.

Preheat the air fryer at 200C/400F for 5 minutes.
Place the steak chunks in a bowl and drizzle on the oil.
300 g (10.5oz) ribeye steak, 1 tbsp neutral oil
Sprinkle over the salt, pepper, chilli flakes, garlic powder, oregano and smoked paprika.
1/4 tsp salt, 1/2 tsp black pepper, 1/2 tsp chilli flakes, 1/4 tsp garlic powder, 1/4 tsp dried oregano, 1/4 tsp smoked paprika, Freshly chopped parsley
Toss everything together to evenly coat, then transfer to the air fryer basket once it’s preheated.
Air fry for 6-8 minutes, tossing once halfway through cooking. The steak bites should be browned with a bit of a golden crust.
Rest the steak bites for 2-3 minutes on a warm plate and then serve.
To make the charred peppers and greens beans for the rice bowl version
- 1/2 red bell pepper, chopped into chunky pieces
- 1/2 yellow bell pepper,, chopped into chunky pieces
- 60g (1 1/4 oz) green beans, chopped into 1″ pieces
Place the vegetables in the air fryer basket and toss with 1/4 tsp each of salt and pepper. Spray with 10 squirts of spray oil an air fry at 200C/400F for 5 mins.
Type of steak to use
I like to use ribeye or sirloin steak if it’s on offer, as that gives the juiciest, most tender steak bites. You can use beef medallions too, for a cheaper option in the UK. If you’re in the USA, strip steak, top sirloin and tenderloin tips (you may have to ask your butcher for tenderloin tips) are great too. Basically you’re looking for a chunky steak, ideally a little marbled, that’s suitable for quick cooking. We don’t want to use stewing/casserole steak or cuts that are chewy unless slow cooked.
