Peanut salad ingredients:
Boiled peanuts – 1 cup
Carrot – 1/2 cup grated
Cucumber – 1/2 cup chopped
Coconut – 1 tbsp grated
Cilantro/Coriander leaves – A few sprigs
Cashews – 15
Pomegranate kernels – 1 tbsp
Dates – 2 chopped
Lemon juice – 1 tbsp
Green chili – 1 finely chopped
Salt – As per taste
Notes:
1. For spice, you can add finely chopped green chili or pepper powder.
2. You may add a tsp of olive oil if you like it.
3. A few raw mango slices can be included too.
4. Soak the raw peanuts overnight/8 hrs and steam them for 15 mins in a pressure cooker or instant pot.
5. You can use canned peanuts if it is available.
How to make peanut salad:
1. Add the boiled peanuts, carrots, and cucumber to a salad bowl.
2. Combine all the ingredients like dates, cashews, cilantro, lemon juice, and coconut.
3. Throw in some pomegranate kernels and give it a nice mix. Do not add salt in advance as it releases water and becomes soggy.
4. The boiled peanut salad is ready to be served.
