Miso butter is the real star of this recipe. Definitely a step up from the “pâtes au beurre” (pasta with butter) from my childhood, offering the perfect savoury, salty, and fatty combination. The butter adds richness and creaminess that balances beautifully with the mild sweetness and saltiness of white miso.

How To Make This Broccoli Pasta with Miso Butter

Ingredients

To make this broccoli pasta with miso butter recipe, you will need:

  • pasta
  • broccoli
  • unsalted butter
  • white miso
  • Parmesan-style cheese

Step 1: Cook The Pasta

Cook the pasta in a large pan according to packet instructions.

Step 2: Prep The Broccoli

In the meantime, cut the broccoli florets into small bitesize chunks.

Step 3: Make The Miso Butter

Mix the butter and miso together in a small bowl. Set aside.

Step 4: Cook The Broccoli

When the pasta has around 3 minutes left to cook, add the broccoli florets to the pan and cook until the pasta is cooked and the broccoli is fork tender (don’t overcook the broccoli).

Drain the pasta and the broccoli, reserving some of the cooking liquid.

Step 5: Mix In The Miso Butter

Return the pasta and broccoli to the pan. Gently mix the miso butter in. Add a splash of pasta cooking liquid to loosen things up.

Step 6: Serve The Broccoli Pasta

Serve straight away with Parmesan-style cheese on top.

Leftovers: Storage and Reheating Guide

If you have any leftover, they can be stored in the fridge and reheated later. This will make the broccoli softer.

Storage:

  • Cool the pasta completely before storing.
  • Place in an airtight container in the refrigerator.
  • Consume within 3 days.

Reheating:

  • Place the pasta in a pan over medium heat.
  • Add a splash of water.
  • Stir gently until heated through, about 3-5 minutes.

Microwave Method

  • Put a portion in a microwave-safe dish.
  • Add a splash of water and cover.
  • Heat in 30-second intervals, stirring between each, until hot.
