Banana bread is the perfect way to use overripe bananas while creating a moist, flavourful treat. This simple recipe requires just a few ingredients and can be customised with dried fruit or nuts for extra texture. Enjoy it fresh from the oven or let it rest overnight for a richer taste!
Ingredients
- •3 large overripe bananas
- •75ml vegetable or sunflower oil (plus extra for greasing)
- •100g brown sugar
- •225g plain flour (or use self-raising flour and reduce baking powder to 2 heaped tsp)
- •3 heaped tsp baking powder
- •3 tsp cinnamon or mixed spice
- •50g dried fruit or nuts (optional)
Instructions
- Preheat & Prep
Preheat your oven to 200°C (180°C fan). Grease and line a 900g loaf tin. - Mash & Mix
Peel the bananas and mash them in a bowl using a fork. Stir in the oil and brown sugar until well combined. - Add Dry Ingredients
Mix in the flour, baking powder, and cinnamon (or mixed spice), ensuring everything is evenly incorporated. If using dried fruit or nuts, fold them in. - Bake
Pour the batter into the prepared loaf tin and bake for 20 minutes. Check the loaf—if it’s browning too quickly, cover with foil. - Final Bake & Cool
Bake for another 20 minutes, or until a skewer inserted into the centre comes out clean. Allow to cool slightly before slicing.
