Kosambari is nothing but a simple South Indian salad recipe that contains green moong dal as a main ingredient. To complement, raw vegetables like onion, tomatoes, and cucumber are combined to make a wholesome and nutritious salad.

Kosambari saladcan be enjoyed as a snack or served as a side dish for lunch thali. Itis absolutely refreshing andlight on the stomach because it keeps you satiated for a long time. Green moong dal is high in protein, vitamin b, calcium, and fiber, contains complex carbs, and is low in fat.

Koasambari is a versatile salad recipe; it can be made with different lentils like chana dal, urad dal, green gram, yellow moong dal, etc. Besides, veggies like cucumber, carrot, corn, beets, raw mango, cabbage, and coriander leaves can be combined with lentils to make a wholesome salad.

Traditionally, the salad is given the final tempering/tadka, which provides an aromatic flavor but is an optional step. Plus, it tastes great when garnished with grated coconut.

The other name for green moong dal is mung bean, green gram in English, pachai payaru in Tamil, and hesaru bele in Kannada.Similarly,kosambariisalso called koshambari in Kannada, koshimbir in Marathi, and Kosumalli in Tamil.

Kosambari, made from moong lentils, is served to Lord Rama on the occasion of Ram Navami. Besides kosambari, Panakam, and neer, mor/majjige is also served to God.

Green moong dal kosambari ingredients:

Boiled green moong dal – 1 cup

Red onion – 1/4 cup chopped

Tomatoes – 1/2 cup chopped

Cucumber – 1 cup chopped

Coriander leaves – 5 sprigs chopped

Pomegranate kernels – 1/4 cup

Dates – 2 chopped

Cashews – 10

Lemon juice – 1 tbsp

Green chili – 1 finely chopped

Pepper powder – 1/2 tsp

Salt to taste

Optional veggies:

Raw mango – 2 tbsp chopped

Coconut – 2 tbsp grated

Carrot – 2 tbsp grated

To temper: (Optional)

Oil – 1 tsp

Mustard seeds – 1 tbsp

Red/Green chili – 1

Curry leaves – 1 sprig

Hing/Asafoetida – A pinch

Tips:

1. Green moong dal can be replaced with soaked yellow moong dal.

2. I have added cashews for a crunchy flavor. It can be skipped or replaced with any nuts of your choice.

3. Dates are added for a sweet flavor. You can skip or replace it with raisins.

4. Tempering is entirely optional. Coconut oil works great for tempering.

5. Adjust spice and salt as per choice.

How to make moong dal kosambari with step by step photos:

1. Place the boiled green moong dal in a mixing bowl.

2. Chop the red onion, tomatoes, cucumber, and cilantro/coriander leaves.

3. Combine and add pomegranate kernels, cashews, lemon juice, and chopped dates. Then, throw in some salt and pepper powder. Mix it well.

4. Serve the kosambari salad as a snack or with a lunch meal.
