Pasta Impostors! – Jazzy Vegetarian


These three Pasta Impostors will wake up your supper table with vibrant textures and flavors that are both vegan and gluten-free! Featuring summer squash “capellini,” zucchini “fettuccini,” and carrot “noodles,” all topped with delicious sauces, this trio of “pasta” dishes will make your family sing!

Slice the spaghetti squash in half, season it and roast the squash until tender. Scoop out the “noodles” and top them with my zippy, sweet pepper marinara sauce, and you have a filling meal!
It’s “zoodles” topped with dairy-free, gluten-free and completely vegan cashews “cream’ sauce! YUM!
Serve this dish hot, warm or cold for a satisfying supper side dish or luncheon entrée.
