Vegan Mediterranean Menu – Jazzy Vegetarian

This Mediterranean inspired, plant-based meal features a satisfying, flavorful salad served with a quick-to-prepare homemade, vegan feta “cheese.” On the side, fresh escarole is lightly sautéed with tangy olives to make eating your greens a pleasure. My simple hummus recipe gives this meal real pizazz. For dessert, a moist, delicious plant-based lemon cake is reminiscent of traditional Greek lemon cake. It’s delicious!

Chickpea-Tomato Salad with Tofu “Feta”
This tantalizing salad is one that I like to serve when I’m entertaining. Marinating the tofu in a lively combination of Greek-style herbs and spices makes a flavorful vegan “feta cheese.” Even if you are not a fan of tofu, you’ll appreciate this tasty twist on a classic salad.
Escarole with Kalamata Olives
I adore the taste of spicy escarole combined with zippy Kalamata olives. Escarole with Kalamata Olives is a tasty side that holds its own served with just about anything.
Lots of Garlic Hummus
This yummy hummus is ready in five minutes flat! Rich, smooth and full of garlicky flavor, this dandy dip is accented with the tangy taste of freshly squeezed lemon juice and a tiny bit of heat from chili powder.
Lemon “Buttermilk” Cake with Maple Glaze
This quick-to-assemble Lemon “Buttermilk” Cake with Maple Glaze is lower in fat than most snack cakes, making it a guilt-free sweet for any day of the week. Homemade vegan “buttermilk” takes only minutes to make. The maple glaze adds moisture and a vibrant, tangy flavor from the freshly squeezed lemons. YUM!
