  • 2 bay leaves
  • 1 14- ounce can of tomatoes undrained
  • 1 loaf of crusty bread for serving
  • Vegan parmesan or grated parmesan for serving

  • Please check that the zucchini, cauliflower, celery and carrots are similar in size chopped. Take a large stockpot. Heat the oil medium-high heat. Add the garlic and all chopped vegetables in a stockpot and sauté and stirring for 4 to 5 minutes. Make sure to onion are soft and care to not let them brown.
  • Let add the thyme, garlic powder, oregano and salt to coat the veggies well.
  • Add the tomatoes, vegetable and bay leaves in the stockpot and bring to a boil and stirring occasionally. Let the heat reduce to medium to low and soup simmer until the veggies are tender or 9 to 12 minutes.
