Pata’ means leaves, the marinated minced chicken breast wrapped in banana leaves is cooked in steam. chicken Paturi or in leaves is a very popular and delicious dish in Bengali Cuisine. A similar dish is Patrani Macchi in Persian Cuisine.

Ingredients: Chicken Paturi/bacon wrapped chicken
- Chicken – 500gm
- Curd – 200gm
- Ginger Paste – 1 tbsp
- Garlic Paste – 2 tbsp
- Green Chilies – 3 tbsp
- Salt – 1 tbsp
- Sugar – 1/2 tbsp
- Black Paper – 1 tbsp
- Mustard Oil – 2 tbsp
- Lemon juice -2 tbsp

For PATURI, The chicken pieces must be boneless. It is better if itis part of the chest.
Cut the all extra fat from the chicken pieces. Cut them into small size square shape pieces.
Marinate the chicken pieces with the curd, salt, sugar, black paper, mustard oil, lemon juice.
Then add the paste of ginger, garlic & green chillies. Mix them well & marinate for 1 hour.
After one hour take the banana leaves ( cut in square shape) &oil brush on its surface. Place the marinated Chicken & tie the leaf with fabric.
On a Kadai take some mustard oil and place the paturi and the cover it for 15 to 20 minutes on a low flame.
After 15 minutes turn the paturi and cook another side for another 15 to 20 minutes on a low flame.
Now it’s ready to serve.
